Many people drink rum while on vacation, and there’s something about a rum cocktail that conjures images of summer breezes and languid afternoons. As a resident of the tropics, I can attest that it seems to blend seamlessly into the environment. However, tropical rum concoctions were once mainstream: The Tiki craze exploded across America in the decades following World War II, resulting in a style of cocktails and cuisine exemplified in restaurants such as Trader Vic’s (the huge postwar popularity may have had something to do with the fact that rum was the cheapest spirit around at the time). Some of these recipes are serious and others are silly, but they’re all fun.
